Cheesy Stuffed Peppers
Ingredients:
2 cups of minute rice white or brown
2 cups of water (to cook the rice)
1 green pepper
3 8 oz cans of tomato sauce
1 lbs hamburger
1.5 cups of shredded Colby Jack cheese
1 (15.25 oz) can of corn
salt and pepper to taste
Directions:
Brown the hamburger. Dice the green pepper and add it to the uncooked rice. Follow the directions for cooking the rice. I usually just put 2 cups of water and 2 cups of rice in a microwave safe bowl for about 8 minutes with the peppers. Mix in the remaining ingredients and cook for a couple more minutes. At this point everything is cooked, so you are just cooking to get everything warm. Sprinkle the top with leftover cheese and enjoy.
